Orangette's Italian Prune Jam

Followed this to the letter and it is amazing.
2:1 Fruit:Sugar by weight
Lemon juice.
Combine and allow to sit at room temperature for a few hours until juicy.
Cook until starting to set per freezer test. (Approx 220 degrees.)
Process jars for ten minutes.
